For some reason, I love seeing birds bathing or sand bathing.

鳥が水浴び、砂浴びしとるところを見るのが好き。特に砂浴び。

金曜日のブルックリンのプレイデートの係に誘ってもらったので、慣れないことですが楽しく頑張ってまーす。今日は2回目の打ち合わせ。先週の木曜日の初めての打ち合わせの時は、じおの昼寝無しで行って、機嫌が悪かったので今日はお昼寝させてからにしたら、お家に着いたのが4時半とかになってしまった〜。

お昼寝したのに、ご機嫌ナナメだった〜、ってオチ、笑。やっぱり歯かな〜。

Kiki still coughs and gags, and it has been a while since she started doing it, so we brought her to check her up. There weren’t much we could do or find out, but we decided to keep monitoring her since it has gotten better.

But, she was such a good kitty, as always! Everyone compliments what a wonderful patient she is, and how sweet and cute she is. That’s right, I know, she’s the cutest cat ever alive! :)

But Kiki kept wanting to go right back in her carry-bag! Poor little Kiki. But once we put the bag away, she stayed with the vet assistant and being such a good kitty, being scratched on the neck by her for a long time. Proud of the little bubbatess for being such a good kitty at the vet, which I’m sure is super stressful.

It was President’s Day, aka, Whitney and Hana spends more time together- day! :) We went to get some stuff for “nesting” and went to grocery shopping together, and came home to find these little cuties.

My dream finally came true!!! Before I became a vegan, and if I was asked what my favorite food was, I’d answer “Omelette and Rice”! Such a nostalgic food, childhood favorite food.

Now that I’m vegan, I think the question got harder to answer, too much food that I love, even more than before!

But I did dream of eating an omelette and rice as a vegan, and today, I just made it up from inspiration from the omelette recipe that I found last week! So here you go, enjoy :)

Vegan “Chicken” Rice: makes big 2

  • a little earth balance margarine
  • 1 small onion-chopped
  • mock chicken-4 slice, diced
  • 4 mushroom of your choice-diced
  • 1/2 green pepper-chopped
  • 1/2 tomato-chopped
  • veggie broth powder-a pinch
  • about 1 tbsp white wine
  • se salt and black pepper
  • 3 or 4 tbsp ketchup or tomato sauce
  • 1 japanese cup cooked rice or 2 bowls worth of rice
  1. melt the margarine on a big frying pan, add onions, then mock chicken, and mushroom
  2. Add green peppers, and tomatoes. Add veggie broth powder and wine, cook on medium heat, let the alcohol evaporate
  3. Add ketchup/tomato sauce, season with sea salt and pepper
  4. add cooked rice, season with sea salt, shape it like a leave on  plate, and get the “omelette” ready!

For omlette: makes 2

  • about 2 tbsp chickpea flour (I didn’t measure it but it’s about that)
  • about 1 tsp sweet potato starch
  • a pinch sea slt
  • about 4 or 5 tbsp water
  • (Daiya cheese-a handful, optional)
  1. Mix all the ingredients well, the batter will be very runny, let them sit for a few minutes before you cook it
  2. spray non stick oil on a pan, pour the batter, cook on low heat
  3. I put Daiya chedder cheese and put on low heat and put a lid to melt the cheese (I cooked both sides the first time, but I didn’t flip the second time and only cooked one side, it worked better that way, it’s softer and more moist!)

My omelette that I cooked both side was a little harder, but it was still really good! I was surprised how much Whitney liked it! Made me very happy :)

Today’s dinner:

  • Pumpkin Nimono かぼちゃの煮物
  • lotus root in Plum Vinegar れんこんの梅酢漬け
  • Kelp, carrots and dried radish Matsumae Zuke 切り干し大根の松前漬け
  • Namasu なます
  • Gomoku mame 五目豆
  • Omelette and Rice  オムライス!
  • miso soup
