All the goodiesssss!!! So excited! :) I just wanna cook Japanese food using all the dried goodies now…. but I can’t, I have to focus on just using all the veggies from the fridge this week!

Someone else is way too excited about this package too….

This headless creature was going crazy on it.

“Is this your new bed, Kiki???” Kiki says “Thank you, mom!” too! haha :)

It’s been quite a while since I made Rice and Beans the last, and today, Whitney said this was the best I’ve done! I did go all out and made more stuff that I thought would go together than just Beans and Rice ;)
Whitney’s Dinner:

My Vegan Cuban (?) Dinner!
- Black Beans and Rice (I did differently today, added jalapeno, and just a tiny bit of tomato paste just because I had it!)
- Pan fried Plantains (I just cut them in angle, and pan fried in Coconut oil)
- Avocados (Saaaaadly I forgot to put on my plate! and it caused this sad face to go crazy on almond ice cream and could not stop myself once I started)
- A few Jalapenos
- Collard Greens (Yes, I made it again! I just really love collard greens and, I had to cook them before they go bad! )
I didn’t realize how good and easy to make plantains are! I’m gonna be making these so often now! :)
…And this is my sad plate, that is missing, AVOCADOS!

Next time I’ll remember to put avocados on mine! Lucky Whitney today, that he had to work later and he didn’t eat at the time I ate, so he got to have avocados that I remembered after I finished my food. I actually had avocados all ready to be put on a plate, I just totally forgot right before I ate! Preggo brainsssss!!!!

You can’t see it in the picture, but I added basil in the noodle today, since I still have lots of fresh organic basil left in the fridge :) And I figured basil makes it kinda like Thai dish, and Thai dish goes well with citrus! Sooo I added the lemon that I had left half used in the fridge. Yes, it’s all about using all the veggies before we leave!

And the leftover Fusilli Salad, though I guess it’s kinda weird to have a noodle main dish and noodle salad on the side :P

Whitney praised me for making the small meal “for the first time”. :P We both had the leftover pizza for lunch and I knew I gave Whitney so much food to bring to work, so I figured I wouldn’t make too much food!

Today’s dinner:
- Fusilli Salad with Tomatoes, Zucchini, Asparagus, and Basil (トマト、ズッキーニ、アスパラとバジルのパスタサラダ)
- Pepper Steak with Asparagus, Onions, and Mushrooms (ピーマン、よりもアスパラ、玉ねぎときのこが多い青椒肉絲)
- Vegan Kimchi (ヴィーガンのキムチ)
- Brown Rice with Barley and other Grains (玄米ごはん)
- Collard Greens and Corn Soup (カラードグリーンととうもろこしのスープ)
I linked the Fusilli Salad recipe that I wrote a while ago, but today I made a lil adjustments since I had leftover lemons that I needed to use!
So today, the sauce was, 1 clove garlic-minced, sea salt and pepper, 1/2 lemon worth of lemon juice, drizzle balsamic vinegar, “21 seasonings” (herb blend), and olive oil. And the fresh organic basil added such a nice flavor! :)

The Friday after Thanksgiving, we went to Mamoun’s to get their awesome falafels and then went to see The Muppets! And, it has nothing to do with the movie we watched but it was wacky the theatre had this set to take photos, haha :)

First, Whitney. Look how good I did on almost cutting off all the edge!

Now me, Whitney took it, Look how he failed.Whitneyyyyyyyyyyyyyyyyyyyyyyyy, you suuuuuuck at taking themed pic that needs the sides cut off, or you kinda suck at taking photos, period. You tend to cut off my body parts all the time, either legs or top of my head. :P
