This is what I promised Whitney “Small Dinner” after the big lunch we had. I guess I had more than I thought I did :P I’m planning to not get much veggies since we are leaving for St. Croix to see Whitney’s parents in a week from today! My goal is to almost empty the fridge again! :)

Today’s dinner:
- Ginger for the Taro to dip (里芋用の生姜)
- Nametake for my Natto ( 納豆に入れるようになめたけ)
- Panfried Konnyaku (こんにゃくのいり煮)
- Kimpira (きんぴら)
- Mushroom Dumplings (キノコ餃子)
- Boiled Taro (里芋)
- Rice with Barley (麦ごはん)
- Miso soup with cabbage, green onions and fried tofu (キャベツ、ネギ、お揚げの味噌汁)
And more sweet potato pie with almond milk ice cream for dessert! :6

I had been meaning to make Country style Biscuits and Gravy, and today was the day!

I “kinda” followed this biscuits recipe ( though used mostly whole wheat) and made up the gravy (just combined collard green juice, soy milk, black pepper, thyme and white flour). There’s room for improvements, but I was satisfied, brought me back to my college years :P

And the leftovers! Numnumnummmmmmmm.

Been craving French toasts, so I made them with the “seeduction” bread from Whole Foods. You can get my French toast recipe here! Topped with Earth Balance margarine and Maple Syrup.
Whitney and I were talking how we both didn’t like the specific flavor of Maple Syrup before, like when we were used to “Syrup”, the one with all the bad ingredients stuff filled with sugar-kind, now, we both really like Maple Syrup for that particular flavor it gives. Now we can truly enjoy and appreciate more Natural flavors!

I had another one of those plate, and kept eating more vegan Mac’n'cheese that Jackson made, and also ate cookies and pie that I brought. Monster, I’m aware.

And look what Wendy gave us! She made us hand knitted baby hat!!!!! So cute!! Thank you, Wendy! :)

Thanksgiving 2011.

Clockwise from top left: Hana’s Green Bean Casserole, Sarah Ann’s Beet Salad, Jackson’s Mac’n'Cheese, Sydney’s Corns, Hana’s Roasted Garlic Mashed Potatoes, Hana’s Stuffings, Veg Turkey, Eric’s Kale Salad, Sarah Ann’s Cranberry Sauce, Hana’s Collard Greens and Sydney’s Brussels Sprouts with Chestnuts. ALL VEGAN!
Stuff I made for Thanksgiving 2011. Too many corn breads. Now some of them resides in my freezer.

Vegan Mashed potatoes. It was the best I’ve made!

My mom’s Sweet Potato recipe, Sweet Potato Pie. I love this pie, it was only Whitney and I who ate those :P

Collard Greens. I got so much Collard Greens, not realizing my kitchen was not equipped to cook that much! How do all the people we saw at the store who were buying 2 times more than me cook those!? I bought like 4 pounds of them!

Green Bean Casserole. This goes under the French fried onions.

My stuffing! I thought I did a really good job on this, I was not a big fan of stuffing until this :P Now I love them!

Aaaan these weren’t vegan, but they were pretty! I brought the Vegan Sweet potato pie and the Vegan chocolate chip cookies I made.

Should have realized there would be so much food and non-vegans wouldn’t have enough room in their tummy to try the vegan ones! I felt silly spending so much time cooking all those food, I got way too excited thinking it would be the opportunity for other people to try my vegan American cooking! oopsie :P
And, can you believe this is our last Thanksgiving in the States!?Feels so weird!
