I made this salad for the first time, but it was really good. The sauce is made with garlic, sugar, red pepper, cilantro stems, vegetarian fish sauce, and lemon juice. Definitely make them again, but for now, I think I made enough to feed us for a week :P

Well, maybe not every Sunday, or should be! But this Sunday, we went back to get more bagels from Bergen Bagels, this time for lunch! Mmmmm. We got the usual: Whole Wheat Everything with Tofu lox, with additions of onions and tomatoes, and another Whole Wheat Everything with Tofu Sundried, with onions and tomato also.

They look so similar but the smell was totally different. They were both yummy!!! We could not get over the fact how good their bagels are. I like other place’s tofu cream cheese, but the BAGELS! the bagels are just so good it doesn’t matter that they don’t have sweet kind of tofu cream cheese!

Well, I would totally get it if they carried sweet kind, but I’d be okay, just because the bagels are the best! So fluffy, so crunchy, so perfect.

And the dinner. Lots of leftover dishes that needed to be eaten. The leftover soba turned into soba salad with peanut butter, with lots of seaweed. This turned better than my last attempt!

image

And my first try, of our favorite Vietnamese dish! Bean Sprout pancake thingy. I should’ve put more turmeric and more liquid to make it crunchier, but overall, it was a success and I couldn’t stop eating it, I was left wanting more! :)

Our dearest friends threw us a baby shower for us!!! I wasn’t expecting it, and had no idea until one of my friends who couldn’t make it came to me and apologized for not being able to make it a week before :P

I don’t think I’ve been to a baby shower as an adult, and didn’t know what it was about, but it was so so much fun!! Who knew baby shower is so much fun!? And this was so awesome: Vegan Cake with my (+Whitney=Whana) name on it! and how witty they did “We Whana baby”! Impressive! Our friends are so cool. The little bubbatess would be such a lucky bebe to have them around her, because you know, her parents ain’t gonna be that cool, however hard they try :P

Yummy Vegan Food! How nice of them to veganize the food for us!! Numnumnummmmm. I don’t even know how to thank them all!! We are so blessed and so lucky to have them in our lives…I’m such a lucky mama to have their support! It was overwhelming how willing so many ppl are to helping us once the bubbatess arrives. So grateful.

I ate way too much, especially the yummy yummy cake, I went for second and the second was like twice bigger than my first, and the first one, I switched the original plate I got for a bigger piece. it was oh so good, and then I got in to sugar comma.

Woke up and wanted to eat lots of veggies. So I made soba noodle and chive pancake, so we won’t get constipated :P

Since it’s so close to John’s, I insisted on going to go get vegan ice cream! Though, we did already have a dessert at the dinner :P But, we just went to our bi-weekly check up at the clinic and already got weighed, so, the Friday after the check up became my binge eating day :P

I got, the usual, cookies and cream, I forget what the base was, coconut or soy, and I also got hemp base chocolate, so rich and good! but I was jealous of Whitney, I should’ve gotten red velvet myself too! It’s nice I can have 2 flavours!

image

Whitney’s pretty cup: green tea and red velvet. They were both soft taste, and very very good.

image

for these 2 cups, it was about $10. And it’s a lil more expensive for hemp base.

I like it, but we still like the taste of lula’s vegan ice cream better if we had to choose.

image

hey look, I already got a chubby faceeeeee from binge eating!!! :P I did get very depressed the next morning, gaining 4 pounds over night! Noooooooooooooooooooooooooooo!!! Guess who’s gonna start an early diet week from Monday?? :P

For some reason, I was craving Eggplant parmesan! Therefore craving, vegan Italian! Whitney found this restaurant last summer when my sister was visiting, and we went back! Last time I wasn’t in the mood for Western vegan stuff, and craving just simple veggies, so I didn’t try those daiya cheese dishes or other stuff (what was I thinking!) but this time, I’m different!

image

How you gonna start an Italian dinner without garlic bread!? Vegan garlic bread. It was a relief that on their vegan menu, they mention that they cook their vegan stuff on a totally different utensils from non vegan dishes.

image

And Margerita pizza with Daiya cheese! Tastes like Italian pizza! Yummm. Very different from our favorite, Viva Herbal, but it’s very good :)

image

Eggplant Parmesan with Daiya cheese. It made me happy it came with pasta! Yummy!

image

And for the dessert, we got a vegan cannoli. I didn’t think I would ever eat a cannoli though I feel like it’s a NY famous treat, just because I didn’t think I could get it vegan, Well, you can here! It’s pretty good.

Now, let’s go get vegan ice cream!

This was supposed to be my “diet dinner” the night before my bi weekly check-up at clinic where I get weighed and get terrified. But it seems like, a lot of food! I did pay attention on the usage of oil though!

image

  • Hijiki
  • Eggplant Namul
  • Vegan Kimch 2 kinds
  • Burdocks
  • Chive pancake
  • Steamed Dumplings
  • Seitan Tofu with Napa in lemon sauce
  • Brown Rice
  • Clear soup
  • Pumpkin salad

image

This is the pumpkin that we have been eating, I thought to change the gear and spice it up, so we wouldn’t be eating the same food everyday! I just mixed it with grapeseed oil vegenaise (I only like grapeseed oil kind for some reason!) and the mustard, it turned out better than I expected, I really liked it! :6

image

And my first try on this eggplant namul recipe, yummy. and such tiny amount of oil used. Success!
