When Rei chan bought spinach last week, it made me want spinach too! :P So this week I bought a huge bag of spinach, I’ll be eating lots of them, plus, it’s good for me since I could always use more iron! :)
My dinner for one. Whitney’s been working so hard…

- Namasu
- Spinach with oystermushroom in soy vinegar sauce
- Sweet pumpkin
- Bean thread salad
- Mushrooms in fermented black bean sauce (first time to make it, and loved it!)
- Brown rice
- Miso soup

I put so many kinds of mushrooms, yum! dried shiitake, dried net-like white mushroom that I don’t know the name of, fresh shiitake, oyster mushrooms, the baby portobello! Numnumnum, I’ll def make these again!
And this is my lunch! I was craving Oyakodon! Oyako means, a parent and a kid, having chicken and egg in it, but I eat neither of them, so I decided to be a lil creative :)

I used mock chicken, and for a beaten egg, I used the mixture of rice flour, chickpea flour, starch and a lil salt. It turned out really well, and totally satisfied my cravings! lovelovelove. See, even if you crave something from memory, you can always recreate it vegan version! ;)
I actually made for 2 servings thinking I’ll save half for Whitney’s lunch, I ended up eating all of them! oops! :P

And the rice was from Friday’s dinner from Madangsui, I didn’t think we had that much left, but when I steamed it to warm it up, it was a lot of rice!

I had been craving Indian food, so we went to our neighborhood Indian restaurant, Bombay Heights! We love this place, and we asked if there were any dishes on vegetarian section, and the waiter guy told us they can make anything without it! How awesome!
I don’t know what these are called, but the yummy stuff they give you for free! onion stuff, chutney and cilantro stuff?

And we usually get those vegetable pakora. Mmmmmm fried food, it has been a while since I put you in my mouth.

And this time we got, Alu Shag fresh spinach & potato cooked with curry sauce, and Vegetable Vindaloo (very very spicy curry)
And, we asked to make them really really spicy, since it might be the last time I can eat very spicy Indian food, he said ok, but, they were spicy but not spicy enough! How disappointing… but we are still satisfied with the taste and totally cleaned the plates :P

Numnumnum! I could’ve eaten another entree :P

Whole Wheat everything with Tofu Scallion! Though I was tempted to get Cinnamon Raisin and Plain Tofu Cream Cheese! Mmmmmmmmmmmmm!

And our usual, we have to get this one. Whole Wheat Everything with Tofu lox! Numnumnum! I sure will be sending Whitney to bring those home for me even when I can’t get there!

March 3rd is doll festival: Hinamatsuri in Japan, to celebrate and pray for the healthy growth of girls. And usually eat Chirashi Sushi and have cram soup?
So I thought to make vegan brown rice chirashi sushi for our little bubbatess soon to be born! :) I made them from scratch for the first time, but I loved it! It’s a lil time consuming but it wasn’t too bad, how good it tasted, it’s totally worth it.
and I soaked the brown rice in more water than usual and it was the best brown rice I cooked!

don’t mind the fact everything else is leftover :P

loved itttt!!! :)

Yes. this was my lunch.
Since I have a check up at clinic the next day, I thought to try to fill my tummy with salad, so I made seaweed salad and made my own dressing. But, I didn’t realize how much I had made :P
I ended up saving salad for later, but totally finished the rest, because you can’t save those for later!

And, I had my craving filled for Korean food. I think my last Korean meal was in September, and it wasn’t Madangsui that I love! Their Healthy Bibmbap (salad bibimbap) is so good! and we always get them with tofu jigae, soondoubu? I can’t spell.

I like to put all the little dishes in my healthy bibimbap in addition!

Then I became soooo badddddd. But I had been waiting for these all day long, and skipped all my cravings for sweets, though I did eat sweet potatoes as always!

Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm.
Vegan Boston Cream Pieeeeeeee.
Oh My God. I felt so so so happy. And some others I had sampled! thank you, Whitney! for getting the brilliant idea of convincing his coworkers to get the dunwell donuts for a coworker’s birthday and bring them home for ME! :) hee hee

I did gain 4 pounds the next day, when I got weighed at the clinic. Assignment for next checkup. ughhhhh.
